"When life gives you lemons make lemonade..."
After a sour birthday, i got tons of lemons at night, and to make up for the day I baked a lemon cake. When it turned out well I decided to share it with you. And here i am writing my first blog ever, utilizing the lemons in my life ;)
Ingredients:
For the lemon layer:
2 large lemons
4 tablespoon unsalted butter
1/2 cup brown sugar
For the cake batter :
3 eggs
1 cup curd
1/4 cup vegetable oil
1cup castor sugar
1+1/2 cup all purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
3-4 drops lemon essence
grated peel of 1 large lemon
juice of 1 lemon
Method:
In a pan simmer slices of 2 lemons, don't peel them, in a butter and sugar. Then lay these slices in the bottom of athickly buttered pan.
for the cake batter:
beat the eggs till frothy white add oil and curd and blend to a smooth mix. In a separate bowl mix flour, baking soda and baking powder and slowly add the dry ingredients to the wet ones. mix in sugar and lemon essence with lime juice and grated peel and mix well.
add more sugar or lemon according to you taste.
pour this mixture over the sliced lemons in the pan.
bake at 150-180 degree Celsius in a preheated oven for 30-40 mins.
Let cool in pan 15 minutes, then invert onto a plate or platter. Serve warm or at room temp with whipped cream if desired.
The sours got converted into sweet and left the fragrance of pure white lemon flowers in my kitchen leaving me with a thought to ponder over..... a plain white cake never smelled so good...
And i realized when the sour was made to turn sweet it felt better than just sweet alone...
so on the day full of lemons refresh yourself with:
- a simple lemonade
- lemon iced tea
- lime drop
- virgin mojito
lemonade :
the easiest way to beat the heat and refresh yourself is to squeeze one large lemon into a tall glass and mix in 2 spoons of sugar or equivalent of sugar substitute , a pinch of salt and a few mint leaves . pour chilled water and ice. mix well and quench your thirst away.
lemon iced tea:
Ingredients:(makes 2 glasses)
- 2 large lemons
- 1/4 cups sugar
- cups fresh mint leaves, plus more for garnish
- 2black tea bags
- Directions:
- peel the lemons and preserve the rind for garnishing. Collect the juice of the lemons in a jug by squeezing them. Boil two cups of water and place teabags in them for 10-15 secs to barely get a little flavor. Add in sugar and mix well. Put lots of ice in tall glasses and pour the tea and lemon juice. mix well. Garnish with lemon peel and mint leaves.
lemon drop:
When you get tired of lemonade kick it up a notch with some vodka and make a Lemon Drop
30 ml vodka
2 spoons fresh lemon juice 100 ml transparent soft drink/ soda
prepare the glass by inverting the rim in lime juice and then in salt.
then pour in the ingredients and stir.
make sure the soda is cold or add ice later.
garnish with a cherry or olive in the
virgin mojito:
Step1) Pour about 200 ml of Transparent aerated drink (chilled) in a tumbler
Step2) Add 10 Mint leaves to the drink
Step3) Add chopped lemon without removing the yellow cover. Make sure they are properly washed. I would suggest to cut lemon in the form of disks to add the best flavour and to make it presentable.
Step4) Place a straw or spoon to continually stir or crush the added contents in the drink.
Step5) Add ice cubes.
The fantastic thing about lemons is that every part of the fruit can be eaten and used to cook with; the juice, the flesh and the zesty skin. They are invaluable in both sweet and savoury dishes and can even be used for non-cooking related activities like cleaning! make the best of all that you have in life...... it doesn't matter whether life gives you lemon or saccharin.... have to potential to convert the lemon .....!!!!!!!
